Drottningpanacotta

Gosh such a lovely weekend we had! Today it's been real summer, wonderful! We have been away for the weekend and visited family and friends, always nice and as usual a lot of good food and drink. I had intended to do some post through my phone but I did not order it so I must catch up now. Begin by inviting our good dessert from last Wednesday when we celebrated the weekend with a little Saturday dinner. This week will also be a short week for me and I will try with my husband to Turkey Wednesday to Sunday. Should be wonderful with a little adult vacation-on-one. Grandma and Grandpa come and take care of the kids so they will be guaranteed not to go any distress in. But back to Wednesday and a good and very easy to prepare dessert, panacotta with raspberry and blueberry. I had run out of gelantinblad but had jelly sugar at home and it will be just as good but a bit sweeter than usual, but it is offset by the tart berries.
Now I sit on the couch and there is so delightfully tired that you only get after a long day in the sun, hoping that this was just the beginning of a long period of sunshine and warmth.
Have a nice week!

Panacotta with raspberry and blueberry

4 1/2 cup cream
1 cup gelesocker
1 teaspoon vanilla or vanilla bean
1/2 cup passed raspberries and blueberries and a couple deciliter for garnish

Pass the raspberries and blueberries so it will be about 1/2 cup of liquid, mix with the cream in a saucepan and stir gelesockret. Bring to a boil and boil for 1/2 minute. Pour into ramekins and chill to cool and solidify. Garnish with fresh or thawed frozen berries and enjoy.
