Today, the children thought that I really became obsessed with my cooking .. when they beat the St. cupcakes for dinner. Meatballs and mashed potatoes is a frequent favorite for the whole family. (Do many visits to IKEA to buy lingonberry jam). Today I found a bottle of Lingonberry sauce Berry from Canada in a shop here and thought it might be fun to serve as sauce for div. desserts. But then suddenly I found that I have ever seen a cupcake mincemeat in a magazine and so was my meatball cupcake. I made an ordinary meatball batter (maybe slightly looser than usual) and also mixed down a little grated cheese. Turned this into muffin cups and baked in the oven at 200 degrees around. 40 min. In the meantime, I made mashed potatoes as usual, I turned into a piping bag and said the spirit of the finished "meatball cupcake" and let the few additional minutes in the oven. Serve with lingonberry sauce and lingonberry jam. Children will love it, maybe a tip to 1st April.
There was also a charge with delicious raspberry muffins.
Raspberry Muffins with havretopping100g smör2 ägg2 dl dl socker4 mjöl2 tsp bakpulver1 vaniljsocker1 tsp-2 tsp cardamom raspberries (fresh or frozen)
Topping: 75 g dl smör3 havregryn2 mjöl1 tbsp cup raw sugar (or brown sugar or plain)
Melt the butter, whisk eggs and sugar until fluffy and mix into other ingredients. Fill muffin cups to about half and press down 2-3 raspberries in each. Melt the butter to the topping and stir together with remaining ingredients. Crumble topping over. Bake at 225 degrees about 12-15 minutes.
